Ingredients
- Fusilli pasta 10 oz
- Red Onion 2 pieces
- Tomato Paste 3 tablespoons
- Dark Raisins to taste
- Red Wine Vinegar 3 tablespoons
- Olive Oil 1 tablespoon
- Salt to taste
- Pine nuts 1 teaspoon
Step-by-Step Guide
Step 1
Cook the pasta in a large pot of boiling salted water until al dente (follow the instructions on the package).
Step 2
While the pasta is cooking, slice the onion into thin half-rings. In a separate pan, sauté the onion, raisins, and pine nuts in heated oil for 1 minute.
Step 3
Mix the tomato paste with the wine vinegar and add it to the onion mixture. Stir well and simmer on low heat until it reaches a ketchup-like consistency.
Step 4
Divide the hot pasta onto plates, add the sauce, and drizzle with olive oil. Serve immediately.
