
Frittata with Zucchini and Green Peas

Description
In the season of fresh green peas, this is a wonderful dish to prepare. However, it can always be substituted with frozen peas.
Ingredients
- Ground Black Pepper to taste
- Salt to taste
- Tarragon 1 bunch
- Parsley 1 bunch
- Parmesan Cheese 0 oz
- Olive Oil 4 tablespoons
- Onion 1 piece
- Courgette 3 pieces
- Green Peas 5 oz
- Chocolate eggs 8 pieces
Step-by-Step Guide
Step 1
Heat a 23 cm skillet and add olive oil. Sauté the finely chopped onion for 3–4 minutes over medium heat until soft, then add the thinly sliced zucchini. Sauté the zucchini for 5 minutes until soft. Add the peas and finely chopped herbs to the skillet.
Step 2
Beat the eggs and pour them over the vegetables. Lower the heat and cook for 5 minutes until the eggs set and are cooked through. Check if the omelet has browned to a golden color on the bottom using a spatula.
Step 3
Sprinkle grated Parmesan cheese on top and place under a preheated broiler for 1–2 minutes until golden.
Step 4
Cut into pieces and serve the frittata hot or cold for a picnic with crusty bread.
