  • Onion 1 head
  • Young zucchini 5 oz
  • Egg Yolk 4 pieces
  • Egg white 4 pieces
  • Tomato 1 piece
  • Vegetable Oil 2 teaspoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Hard Cheese 0 oz

Step-by-Step Guide

Step 1

Preheat the oven to 200°C.

Step 2

Peel and finely chop the onion.

Step 3

Cut the zucchini into sticks.

Step 4

Grate the cheese on a fine grater.

Step 5

Slice the tomato into rounds.

Step 6

In a small bowl, add 4 egg yolks, 4 egg whites, grated cheese, salt, and pepper to taste.

Whisk everything well with a whisk.

In a skillet over medium heat, heat 2 teaspoons of vegetable oil and sauté the onion until slightly yellow (about 8-10 minutes).

Add the zucchini, increase the heat (slightly above medium), season with salt and pepper, and cook for 3-4 minutes until all the moisture evaporates, stirring occasionally.

Pour the prepared egg mixture over the vegetables, ensuring the eggs cover all the vegetables.

Top with the tomato slices. Season with salt and pepper to taste.

Once the edges of the frittata start to set (about 2-3 minutes), remove the handle from the skillet and transfer the frittata to the preheated oven at 200°C for 15-18 minutes, or until the frittata is fully cooked.
