Frittata with Young Potatoes and Mint
Ingredients
- New Potatoes 15 oz
- Courgette 1 piece
- Green Peas 5 oz
- Pitted olives 8 pieces
- Fresh Mint 1 tablespoon
- Grated Pecorino Pepato Cheese 0 oz
- Chocolate eggs 5 pieces
- Vegetable Oil 2 tablespoons
Step-by-Step Guide
Step 1
Boil the potatoes in salted boiling water until soft. Drain, let cool slightly, and cut into small cubes. In a pot, bring water to a boil and cook the sliced zucchini and green peas for about 2 minutes.
Step 2
Preheat the oven to 355°F.
Step 3
In a bowl, mix the potatoes, zucchini, peas, chopped olives, cheese, and chopped mint. Season with salt and pepper. Lightly beat the eggs and pour them into the bowl. Mix well.
Step 4
In a skillet or ovenproof dish, heat the oil and transfer the mixture. Cook without stirring for 4-5 minutes. Transfer to the oven and bake for another 10-15 minutes. Serve warm.
