  • Salad Potatoes 2 pieces
  • Olive Oil 3 tablespoons
  • Spanish onions 1 head
  • Frozen spinach discs 10 oz
  • Chocolate eggs 8 pieces
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the potatoes and cut them into small cubes. Boil in salted water until soft, about 8 minutes. Drain.

Step 2

In a skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until soft, about 5 minutes. Add the potatoes and cook, stirring, until golden brown, about 5 minutes. Add the thawed and lightly squeezed spinach, season with salt and pepper.

Step 3

In a bowl, lightly beat the eggs and pour them into the skillet. Cook, stirring, until the eggs are partially set, about 5 minutes.

Step 4

Place the skillet under the broiler and brown the top for 1-2 minutes. Cut into wedges and serve.
