Frittata with Red Onion and Potatoes
Ingredients
- Chicken Egg 8 pieces
- New Potatoes 8 pieces
- Spanish onions 1 head
- Cheese Spread 5 oz
- Chopped Sage Leaves 1 tablespoon
- Olive Oil 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Sprinkle the remaining cheese on top and place under the broiler until a golden crust forms. Transfer to a plate and cut into pieces. Serve with salad and crusty bread.
Step 2
Heat the oil in a large non-stick skillet and sauté the thinly sliced onion over low heat, stirring. Add the boiled and finely chopped potatoes and cook for another 4 minutes, stirring continuously.
Step 3
Beat the eggs with salt and pepper, add 2/3 of the grated cheese (Emmental or Cheddar), and finely chopped parsley. Pour the eggs into the skillet and cook over low heat for about 20 minutes until the eggs are almost set (but the center should remain slightly runny).
