Ingredients
- Onion 1 head
- Salt to taste
- Herbs 1 bunch
- Tomatoes 1 piece
- Sweet Pepper 1 piece
- Mussels 0 oz
- Chicken Egg 2 pieces
Step-by-Step Guide
Step 1
Sauté the onion, pepper, and tomato, all cut into very thin strips, then simmer with the mussels in olive oil for about 10 minutes, until the pepper becomes soft and most of the liquid has evaporated.
Step 2
Meanwhile, beat the eggs with salt and a couple of teaspoons of water, then pour them over the vegetables and mussels. You can mix the beaten eggs with freshly chopped herbs (such as green onions, parsley, dill, etc., whatever you have) or sprinkle dry Italian herbs (like oregano, basil, etc.) on top, depending on your preference.
Step 3
As soon as the omelette rises under the lid, serve it immediately.
