For this dish, you can use frozen or canned green peas. To quickly thaw frozen peas, place them in a colander and pour boiling water over them from a kettle.
Ingredients
- Salt to taste
- Olive Oil 2 tablespoons
- Fresh Mint 1 bunch
- Feta cheese 5 oz
- Scallions 1 bunch
- Green Peas 5 oz
- Chocolate eggs 6 pieces
Step-by-Step Guide
Step 1
Sauté the green onions in olive oil in a skillet until soft.
Step 2
Whisk the eggs, add the crumbled feta cheese, peas, salt, and mint, and mix. Pour the mixture into the skillet. Leave on the heat until the bottom sets.
Step 3
Then place under the broiler to cook the top. Cut into quarters and serve.
