For this dish, you need to prepare gnocchi (dumplings) in advance or buy frozen ones.

  • Tomatoes 2 pieces
  • Corn Salad 1 bunch
  • Ground Black Pepper to taste
  • Olive Oil 1 tablespoon
  • Scallions 1 bunch
  • Cheese Spread 5 oz
  • Chocolate eggs 6 pieces

Step-by-Step Guide

Step 1

Boil the gnocchi in a large pot of boiling water.

Step 2

Meanwhile, in a large bowl, mix the eggs, finely chopped green onion, and black pepper — resist the temptation to add salt, as the cheese is quite salty.

Step 3

Carefully drain the gnocchi and gently mix with the beaten eggs and diced cheese. The cheese should be a type with mold (like Dolcelatte).

Step 4

Heat the oil in a non-stick skillet with a diameter of 23 cm. Pour the egg mixture into the skillet and cook on the lowest heat for 6–7 minutes, until the eggs are set.

Step 5

Preheat the broiler. Place under the broiler until the frittata is golden. Carefully remove the frittata from the skillet — it may stick to the bottom where the cheese melted — and transfer it to a cutting board. Cut into wedges and serve with green salad and tomatoes.
