Frittata with Feta, Zucchini, and Mint
Ingredients
- Chicken Egg 6 pieces
- Milk 5 fl oz
- Courgette 3 pieces
- Mint Leaves 0 oz
- Olive Oil 1 tablespoon
- Salt to taste
- Feta cheese 5 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Preheat the grill in the oven.
Step 2
In a bowl, whisk the eggs with the milk. Add salt and pepper to taste.
Step 3
Then add the grated zucchini, chopped mint, and half of the crumbled feta.
Step 4
Heat the olive oil in a large ovenproof skillet. Pour in the egg mixture and cook on low heat for about 8-10 minutes, without stirring, until almost set.
Step 5
Sprinkle with the remaining feta and place under the grill for 2-3 minutes until fully cooked. Let it sit for 3-4 minutes and cut into wedges.
