Slice the zucchini into thin rounds.
Step 2
Heat a large skillet well. Add the olive oil and garlic. Sauté over medium heat, stirring, until golden brown. Add the zucchini, salt, black pepper, and oregano. Stir, slightly increase the heat, and cook until the zucchini are tender but still slightly firm inside, remembering to turn them occasionally. Transfer to a warm plate, leaving excess oil in the skillet, and serve.
