Fried Zucchini with Herbs
Ingredients
- Salt to taste
- Parsley 3 stems
- Safflower Oil 15 fl oz
- Chocolate eggs 4 pieces
- Wheat Flour 0 oz
- Courgette 5 lbs
Step-by-Step Guide
Step 1
Peel the zucchini from the skin and seeds, and cut them into thin slices. Then place them in a colander, sprinkle with salt, and let sit for 1 hour. Rinse and dry.
Step 2
Pour the flour onto a flat plate. Beat the eggs in another plate. Heat the oil in a deep skillet to 355°F.
Step 3
Dip the zucchini slices in the flour, then in the egg, and then into the hot oil. Fry until golden brown. Remove with a slotted spoon and drain excess oil. Keep warm while frying the entire batch. Serve immediately, sprinkled with fresh parsley.
