Preheat the oven to 500°F.

In a bowl, mix the carrots with the oil, 0.5 teaspoon of salt, and 0.25 teaspoon of pepper. Place in a baking dish and put in the oven for about 20 minutes. Reduce the temperature to 320°F and roast for another 25 minutes, stirring occasionally, until golden brown and tender. Increase cooking time if necessary.
