Fried Tomatoes with Eggs and Green Onions (Xihongshi Chao Jidan)
Ingredients
- Chicken Egg 4 pieces
- Vegetable Oil 4 tablespoons
- Garlic 3 cloves
- Tomatoes 2 pieces
- Sugar 1 teaspoon
- Coarse Salt to taste
- Green onion tops 1 piece
Step-by-Step Guide
Step 1
In a bowl, whisk the eggs well.
Step 2
Heat a wok over high heat until it begins to smoke. Add 1 tablespoon of oil and spread it across the surface. Pour in the eggs (preferably around the edges) and cook, stirring, until the eggs set but do not start to brown, breaking up any clumps, for about 1 minute. Transfer to a plate.
Step 3
Wipe the wok and return it to high heat. Add the remaining oil and spread it across the surface.
Step 4
Add the thinly sliced garlic and the tomatoes cut into 8 segments and cored. Stir-fry for 1 minute until the tomatoes start to soften.
Step 5
Return the eggs to the wok and add the sugar. Cook, stirring, for another 30 seconds until the eggs are heated through, season with salt, and serve, garnished with chopped green onions.
