Fried tofu with asparagus in orange sauce
Ingredients
- Black Bean Paste 2 tablespoons
- Herbed Tofu 15 oz
- Olive Oil 4 teaspoons
- Asparagus 20 oz
- Balsamic Vinegar 2 tablespoons
- Chopped Sage Leaves 3 tablespoons
- Orange zest 1 teaspoon
- Orange juice concentrate ¼ cup
- Salt ¼ teaspoon
Step-by-Step Guide
Step 1
Preheat the oven to 445°F. Grease a large baking sheet with oil.
Step 2
Cut the tofu into small cubes. In a bowl, mix 1 tablespoon of miso, 1 tablespoon of vinegar, and 2 teaspoons of oil. Add the tofu and mix well. Then spread it on the prepared baking sheet and bake for 15 minutes.
Step 3
Add the asparagus to the tofu, mix, and return to the oven for another 8–10 minutes, until the tofu is golden and the asparagus is tender.
Step 4
Meanwhile, in a bowl, mix the remaining miso paste, vinegar, and oil, add the basil, juice, orange zest, and salt. Mix well, add the asparagus with tofu, mix again, and serve.
