Fried Sweet Potatoes with Pears
Ingredients
- New Potatoes 2 pieces
- Olive Oil 3 tablespoons
- English Dry Mustard 1 teaspoon
- Cayenne Pepper ¼ teaspoon
- Grated Ginger Root ½ teaspoon
- Coarse Salt to taste
- Bartlett Pear 2 pieces
Step-by-Step Guide
Step 1
Remove the cores from the pears and cut them lengthwise into 4 pieces, then crosswise in half.
Step 2
Preheat the oven to 390°F (about 400 degrees Fahrenheit).
Step 3
Peel the sweet potatoes and slice them thinly. Arrange them on a baking sheet, drizzle with 2 tablespoons of olive oil, and sprinkle with mustard, ginger, cayenne pepper, and coarse salt. Bake in the oven, stirring, for 20-25 minutes until almost tender.
Step 4
Add the pears, mix, and drizzle with the remaining oil. Return to the oven until the pears and sweet potatoes are tender, about another 10 minutes.
