  • Garlic 3 cloves
  • Olive Oil 5 fl oz
  • Sweet Potato 5 lbs
  • Chopped Sage Leaves 24 pieces

Step-by-Step Guide

Step 1

Preheat the oven to 445°F.

Step 2

In a blender, blend the garlic, 60 ml of olive oil, and 0.75 teaspoons of salt until smooth. Slice the sweet potato into thin rounds and place them in a bowl. Add the garlic oil and mix well. Spread in an even layer on a baking sheet.

Step 3

Bake until cooked and golden brown for about 20-30 minutes.

Step 4

Heat the remaining oil in a small skillet and fry the sage leaves in batches until crispy, about 30 seconds to 1 minute. Transfer to a paper towel.

Step 5

On a serving plate, arrange the sweet potatoes and top with the crispy sage leaves.
