Fried Suluguni
Appetizers • Georgian
Description
This dish pairs well with a sauce made from melted butter, garlic, and cilantro. Just be sure not to add salt, as suluguni is already a sufficiently salty cheese, even in its mildest forms.
Ingredients
- Olive Oil 0 fl oz
- Suluguni Cheese 20 oz
- Butter 0 oz
Step-by-Step Guide
Step 1
Melt the butter in a skillet, then add the olive oil and heat the mixture well. Butter has the unfortunate tendency to burn over high heat, so adding olive oil is not only a matter of flavor but also of preservation: the butter won't burn as quickly when combined with vegetable oil. However, it's important to use refined vegetable oil rather than fresh-pressed oil. To be completely safe, consider using clarified butter instead of regular butter. This way, you'll be able to fry a lot of cheese in a small amount of hot fat.
Step 2
Slice the suluguni cheese into 1-centimeter thick pieces and fry in hot oil on one side until golden brown, then flip and fry the other side. Serve immediately in the skillet while the cheese is still hot and melty.
