Fried stuffed peppers with goat cheese and olives

Ingredients

  • Goat cheese 10 oz
  • Cilantro 3 tablespoons
  • Red Long Chili Peppers 6 pieces
  • Wheat Flour ¼ cup
  • Yellow Cherry Tomatoes 12 pieces
  • Coarse Cornmeal ½ cup
  • Coarse Salt to taste
  • Olives stuffed with lemon 12 pieces
  • Vegetable Oil 3 tablespoons

Step-by-Step Guide

Step 1

In a bowl, mix the goat cheese with cilantro. Chill.

Step 2

Cut the canned and fresh peppers, remove the seeds, and fill them with cheese. Gently press down.

Step 3

In a large plate, mix the cornmeal, wheat flour, and ¼ teaspoon of salt. Coat the peppers in the mixture on all sides. Also coat the olives (if the peppers do not coat well, brush them with the brine from the olives).

Step 4

Heat the oil in a pan over medium heat. Fry the peppers and olives in batches until golden brown, about 8–12 minutes. Serve hot.
