Fried Sprats
Ingredients
- Ocean salt 2 teaspoons
- Sprats 20 oz
- Wheat Flour 2 tablespoons
- Corn Flour for Polenta 1½ tablespoons
- Chopped Sage Leaves 2 teaspoons
- Lemon 1 piece
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
In a bowl, mix the fish and sea salt. Cover and place in the refrigerator for a while.
Step 2
Combine the wheat flour, corn flour, parsley, spices, and black pepper. Heat vegetable oil in a large pot to 355°F. Dredge a third of the fish in the flour, shake off the excess, and fry in the oil for 1.5 minutes until crispy. Transfer to a paper towel. Repeat the same with the remaining fish.
Step 3
Before serving, heat the oil to 375°F and fry the fish for another minute until golden brown. Transfer to a towel, lightly salt, and serve hot with lemon wedges.
