Fried Spanish Artichokes

Ingredients

  • Lemon 1 piece
  • Spanish artichokes 4 pieces
  • Olive Oil to taste
  • Ground Black Pepper to taste
  • Coarse Salt to taste

Step-by-Step Guide

Step 1

Remove several of the tough outer leaves from the artichokes, cut off the bottom and the top third, scoop out the heart, and slice into half-centimeter thick pieces. To prevent the flesh of the processed artichokes from browning, place them in cold salted water with lemon juice.

Step 2

Heat a generous amount of olive oil in a skillet, fry the dried artichoke slices on paper towels until golden brown, and blot off excess oil.

Step 3

Arrange the fried artichokes on a plate, sprinkle with ground black pepper and coarse sea salt.
