Fried sardines escabeche style
Ingredients
- Sardines 6 pieces
- Carrot 1 piece
- Celery salt ½ stalk
- Onion 1 piece
- Wheat Flour 0 oz
- Dry White Wine 5 fl oz
- Parsley 2 stalks
- Thyme 1 stalk
- Bay leaf 2 pieces
- Apple Cider Vinegar 2 tablespoons
- Olive Oil 4 tablespoons
- Green peppercorns a pinch
- Salt to taste
Step-by-Step Guide
Step 1
Chop the carrot, onion, and celery into small cubes.
Step 2
In olive oil over medium heat, sauté the vegetables for 10 minutes. Then add the bay leaf, 6 black peppercorns, a sprig of thyme, parsley leaves, and salt. Pour in the wine and a couple of tablespoons of apple cider vinegar. Simmer covered for 10 minutes. This is my escabeche.
Step 3
Remove the insides from the sardines. Rinse the fish under running water, dry with paper towels, season with salt, coat in flour, and fry in olive oil.
Step 4
Pour the marinade over the fried sardines, cool, and refrigerate for 12 hours.
