Cut the potatoes into wedges, place them in a bowl, and mix with the remaining oil, half a teaspoon of salt, and a quarter teaspoon of pepper. Add to the shallots. Bake until the potatoes are tender and golden brown, about 40-50 minutes, stirring occasionally.
