- Mixed tomatoes of different colors 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Coarse Cornmeal ¼ cup
- Egg white 1 piece
- Olive Oil to taste
- Corn Grits ¼ cup
Step-by-Step Guide
Step 1
Slice the tomatoes into thin rounds. Season with salt and pepper.
Step 2
Dredge the tomatoes first in flour, then in lightly beaten egg, and finally in corn grits, pressing lightly.
Step 3
Heat olive oil in a skillet over medium heat and fry the tomato slices on both sides for 1-2 minutes until golden brown.
