Fried Green Asparagus
Ingredients
- Olive Oil 6 tablespoons
- Asparagus 5 lbs
- White bread 0 oz
- Garlic 2 cloves
- Paprika ½ teaspoon
- Champagne Vinegar 3 tablespoons
- Parsley 3 stems
- Salt to taste
Step-by-Step Guide
Step 1
Clean and trim the asparagus and cut it into 4 cm pieces.
Step 2
Heat the olive oil in a pan, cut the crusts off the bread and fry it until golden brown on both sides, turning it occasionally. Remove the bread and set aside. Add the garlic to the pan and cook for a few more minutes. Transfer the bread and garlic to a mortar and grind them.
Step 3
Pour the oil from the pan into a pot and heat it. Add the asparagus to the pot and cook for 2–3 minutes. Then remove the pot from the heat and stir in the paprika, adding enough hot water to cover the asparagus. Return the pot to the heat, cover, and simmer for 1 hour over medium heat, shaking occasionally.
Step 4
Then add the vinegar and a bit of the asparagus broth to the mortar, mix, and transfer the contents to the pot with the asparagus. Season with salt and cook for another 5 minutes. Sprinkle with finely chopped parsley and serve immediately.
