Fried eggplants with red pepper and tofu
Ingredients
- Vegetable Oil 3 tablespoons
- Garlic 2 cloves
- Herbed Tofu 20 oz
- Eggplants 20 oz
- Soy Sauce 5 fl oz
- Orange Bell Peppers 1 piece
- Sugar 2 tablespoons
- Fresh basil leaves ¼ cup
- Oyster Mushrooms 3 tablespoons
Step-by-Step Guide
Step 1
Heat the vegetable oil in a wok over high heat. Add the tofu cut into medium pieces and fry until golden brown, turning, for 5 minutes. Use a slotted spoon to transfer to a plate.
Step 2
In the wok, add the finely chopped garlic, medium-cut eggplants, and medium-cut pepper. Fry until soft for 8-10 minutes.
Step 3
Add the sugar, oyster sauce, and soy sauce. Cook, stirring, for another 2 minutes.
Step 4
Return the tofu to the wok and mix well.
Step 5
Remove from heat and add the basil leaves. Stir and serve over cooked rice.
