Ingredients
- Eggplants 1 piece
- Soy Sauce 0 fl oz
- Date honey 0 fl oz
- Rice Vinegar for Sushi 0 fl oz
- Garlic 1 clove
- Sesame Oil 0 fl oz
- Toasted Cumin Seeds 0 fl oz
- Lemon 1 piece
- Mild Chili Spice to taste
- Salt a pinch
- Spanish onions 1 piece
- Dill 1 bunch
- Vegetable Oil 0 fl oz
- Brown Sugar 0 oz
- Thyme 1 sprig
Step-by-Step Guide
Step 1
For the marinade, mix honey, vinegar, soy sauce, and sesame oil.
Step 2
Cut the eggplant into half circles and pour the marinade over it.
Step 3
Sprinkle chili pepper on top, cover with plastic wrap, and let it sit for half an hour.
Step 4
Then, fry the eggplant over high heat. Fry it, drizzling the remaining marinade directly into the pan. Fry in batches to avoid steaming.
Step 5
Place on paper to drain any excess oil, if present.

In a mortar, grind sesame seeds, garlic clove, a pinch of salt, sugar, and the juice of half a lemon.
Step 7
Add thyme or cumin - whichever you prefer.
Step 8
When the eggplants cool, mix them with the sauce, chopped red onion, and dill, and let it marinate in the refrigerator.
