Description

A recipe from the town of Lukhovitsy, known as the cucumber capital of Russia. Local residents harvest up to three tons of cucumbers from their gardens every summer, preparing them in dozens of ways.

Ingredients

  • Breadcrumbs 2 spoons
  • Spanish onions 2 heads
  • Cucumbers 0 lbs
  • Champagne Vinegar 1 tablespoon
  • Vegetable Oil 5 fl oz
  • Sugar a pinch
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Peel the cucumbers and cut them into thick strips. Coat them in breadcrumbs mixed with salt and pepper. Slice the red onion into thin half-rings.

Step 2

In a deep skillet, heat vegetable oil, then add the onion and lightly sauté it. The onion should become softer while retaining some of its freshness.

Step 3

Remove the onions from the skillet and transfer them to a deep bowl.

Step 4

In oil, sauté the breaded cucumbers for one minute. Remove the cucumbers and transfer them to a bowl with the onions. Add vinegar and sugar to the bowl and mix well.
