Ingredients

  • Pickled Chanterelles 10 oz
  • Fresh Berries 0 oz
  • Shallot 0 oz
  • Vegetable Oil 0 fl oz
  • Butter 0 oz
  • Thyme to taste
  • Parsley to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Rinse the chanterelles and dry them well.

Step 3

If the chanterelles are large, cut them in half or into quarters; leave the small ones whole.

Step 4

Slice the shallots into thin strips.

Step 5

In a large skillet, heat the vegetable oil and butter.

Step 6

Add the shallots and chanterelles; the mushrooms should be in a single layer and not crowded so they fry instead of releasing juice.

Step 7

Fry the chanterelles until cooked, about 5–7 minutes.

Step 8

Add the blueberries and fry for another 2 minutes.

Step 9

At the end, season with salt, add thyme leaves, and chopped parsley.

Step 10

Serve the fried chanterelles with blueberries alongside fish and potatoes, as an appetizer or a side dish.
