
Fried Beets with Caramelized Onions and Feta

- Yellow Beets 20 oz
- Onion 20 oz
- Vegetable Oil 1 tablespoon
- Dijon Mustard 1 tablespoon
- Feta cheese ½ cup
- Red Wine Vinegar 2 tablespoons
- Olive Oil 2 tablespoons
Step-by-Step Guide
Step 1
Preheat the oven to 375°F.
Step 2
Wrap each beet in foil, place on a baking sheet, and bake in the oven for 1 to 1.5 hours until tender. Cool, peel, and cut into medium pieces.
Step 3
Meanwhile, heat the vegetable oil in a skillet. Add the sliced onion and cook over low heat for 20-30 minutes until the onion begins to caramelize.
Step 4
In a bowl, mix the crumbled feta, mustard, vinegar, and olive oil.
Step 5
Place the beets in a serving bowl, top with the onions and the feta mixture.
