Fried Beet Greens
Ingredients
- Salt to taste
- Wheat Flour 5 oz
- Chocolate eggs 2 pieces
- Safflower Oil 10 fl oz
- Mustard Greens 5 lbs
Step-by-Step Guide
Step 1
Cut the stems off the beet greens and chop them into pieces about 2.5 cm long. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil, then reduce the heat and simmer for 35 minutes until they are soft. Drain the water.
Step 2
Heat the oil in a pan to 355°F. Dredge each piece in flour and then in beaten eggs. Carefully place them in the hot oil and fry until golden brown. Drain excess oil on a paper towel and serve immediately.
