Description
Fragrant zucchini caviar
Ingredients
- Tomatoes 1 piece
- Young zucchini 1 piece
- Onion ½ pieces
- Carrot 1 piece
- Garlic 2 cloves
- Salt 1½ spoons
- Sugar 1 tablespoon
- Spices to taste
- Olive Oil 1½ spoons
- Celery stalk 0,7 stalks
- Balsamic Vinegar ½ spoons
Step-by-Step Guide
Step 1
Peel and chop the onion. Grate the carrot.
Step 2
Mince the garlic. Sauté it in a saucepan. Add the onion and carrot to the pan. Season with 0.5 tsp of salt.
Step 3
Dice the tomatoes, grate the zucchini, and finely chop the celery.
Step 4
When the carrots and onions are sautéed, add the tomato. Simmer until the tomato releases its juice. Then, add the zucchini and celery. Season with salt.
Step 5
Simmer until fully cooked. Before removing from heat, add vinegar, sugar, and spices. You can also add some fresh herbs.
Step 6
Purée.
Step 7
Bring to a boil (I added more water, as the mixture was very thick).
Step 8
Transfer to a jar or container. The caviar does not have a long shelf life.
