Fragrant Pickled Ramps in Wine Vinegar
Ingredients
- Sugar 5 oz
- Champagne Vinegar 10 fl oz
- Water 10 fl oz
- Mustard Greens 0 oz
- Nigella Seeds 0 oz
- Coriander essential oil 0 oz
- White Pepper (whole) 0 oz
- Green peppercorns 0 oz
- Bay leaf 1 piece
- Ramps 0 lbs
- Coarse Salt to taste
Step-by-Step Guide
Step 1
In a large pot, bring well-salted water to a boil. Add the ramps and cook for 30 seconds. Then quickly plunge them into ice water. Drain and transfer to a jar.
Step 2
In a saucepan, combine vinegar, sugar, water, and 1 tablespoon of salt. Bring to a boil, stirring until the sugar and salt dissolve. Then add mustard seeds, fennel seeds, coriander seeds, pink peppercorns, white peppercorns, and bay leaf.
Step 3
Pour the hot marinade over the ramps and let cool. Seal tightly and refrigerate. The ramps will be pickled in just one day.
Step 4
Rinse the ramps well. Trim the leaves, leaving small green tips.
