  • Wild Garlic Greens 25 oz
  • Butter 5 lbs
  • Lemon 2 pieces
  • Salt to taste
  • Ground Black Pepper to taste
  • Thyme to taste

Step-by-Step Guide

Step 1

Rinse the wild garlic well and boil it in salted water for 30 seconds, then immediately transfer it to ice water. Squeeze out excess water and dry. Finely chop.

Step 2

In a large bowl, mix the softened butter, lemon juice, and grated lemon zest, wild garlic, salt, and pepper. Optionally, add a bit of thyme.

Step 3

Lay out about 4 sheets of parchment paper on a work surface, place 0.5 kg of the butter mixture on each in the shape of long sausages. Tightly roll them up and place in the freezer until firm.
