Ingredients
- Olive Oil 1 tablespoon
- Garlic 4 cloves
- Paprika 2 spoons
- Ground Cumin 1 tablespoon
- Ground coriander 1 tablespoon
- Carrot 4 pieces
- Water 1 glass
- Salt to taste
- Meyer Lemon Juice 3 spoons
- Chopped Sage Leaves ¼ glasses
Step-by-Step Guide
Step 1
Peel the carrots and slice them into small rounds to yield about 3 cups.
Step 2
Heat olive oil in a skillet over medium heat. Add minced garlic, cumin, and coriander. Cook for 20 seconds, stirring, until fragrant.
Step 3
Add the carrots, water, lemon juice, and salt. Bring to a boil, then reduce to a low heat, cover with a lid, and simmer for 6-8 minutes until tender. Remove the lid and cook for an additional 2-4 minutes, until the carrots are completely soft and the liquid has thickened into a syrup.
Step 4
Stir in the parsley and serve hot or at room temperature.
