Forest Mushrooms in Butter, Sherry, and Lemon
Ingredients
- Butter 1 tablespoon
- Shallot 2 pieces
- Garlic 1 clove
- Aspen mushrooms 5 oz
- Lemon 1 piece
- Medium-dry sherry ¼ cup
- Chopped Sage Leaves 4 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
In a skillet, melt the butter and add the finely chopped shallot, sauté until soft for 3-5 minutes. Add the minced garlic and cook for another minute.
Step 2
Add the thinly sliced mushrooms and 0.25 teaspoons of salt and cook until all the liquid from the mushrooms has evaporated.
Step 3
Pour in the sherry and cook until it has completely evaporated and the mushrooms begin to caramelize.
Step 4
Add the juice and grated zest of 1 lemon and the parsley. Stir for a minute, remove from heat, and season with salt and pepper to taste.
