Flemish Carrots
Ingredients
- Butter 1 tablespoon
- Turnips 3⅖ pieces
- Cream 5 fl oz
- Whole egg 1 piece
- Sugar ½ teaspoon
- Orange zest 1 teaspoon
Step-by-Step Guide
Step 1
Peel the carrots and slice them. Cover with water and boil for 5 minutes. Drain the water.
Step 2
Then cover again with cold water so that the carrots are slightly submerged. Add the butter, sugar, and zest, and simmer over medium heat until some of the water evaporates.
Step 3
Thoroughly mix the cream with the yolk. Pour the mixture into the carrots, heat gently, but do not boil. Season with salt and pepper to taste.
