- Spinach 5 oz
- Shallot 1 piece
- Scallions 2 pieces
- Thyme 2 sprigs
- Mustard Greens 1 teaspoon
- Curry to taste
- Egg white 1 piece
- Salt to taste
- White Pepper (whole) to taste
- Apple Wine 0 fl oz
- Fish Oil 5 fl oz
- Wheat Flour 0 oz
- Vegetable Oil 1 tablespoon
- Salmon 10 oz
- Sea Bass 10 oz
Step-by-Step Guide
Step 1
Pass the fish fillet, sautéed spinach, and shallot through a meat grinder. Add salt, pepper, and curry. Gently fold in the beaten egg white, mustard, and chopped thyme. Mix thoroughly and shape into cakes.
Step 2
Coat the cakes in flour and fry in vegetable oil. Then drizzle with wine, add broth, and cook in a preheated oven at 355°F for about 10 minutes.
