Filling for Ravioli with Sausage Meat and Spinach
Ingredients
- Salt to taste
- Chicken Egg 1 piece
- Port Wine 1 tablespoon
- Vienna Sausage 5 oz
- Onion ¼ piece
- Olive Oil 3 tablespoons
- Milk 5 tablespoons
- White bread 0 oz
- Spinach 10 oz
Step-by-Step Guide
Step 1
Clean the spinach from tough parts, rinse, and boil in salted water for about 10 minutes. Drain the water, squeeze it in a colander until the spinach is dry. Finely chop the leaves.
Step 2
Place the bread with the crusts removed in a bowl and pour hot milk over it. Finely chop the onion.
Step 3
Heat the olive oil in a pan, add the onion, and sauté over low heat, stirring, for 10 minutes. Mix in the sausage meat. Remove the pan from heat and transfer the meat and onion to a bowl.
Step 4
Squeeze the bread and add it to the meat mixture along with the port wine, beaten egg, and a pinch of salt. Mix everything well, then add the spinach. Allow the mixture to cool completely before using it to fill the ravioli.
