Fermented Beetroot with Orange Zest and Ginger

Ingredients

  • Beetroot 4 pieces
  • Mustard seeds 1 teaspoon
  • Allspice berries 1 teaspoon
  • Black peppercorns to taste
  • Cloves 1 teaspoon
  • Cinnamon sticks 2 pieces
  • Ginger Root 1 head
  • Orange zest 1 piece
  • Whey 2 tablespoons
  • Honey 2 tablespoons
  • Water 3 cups
  • Coarse Salt to taste

Step-by-Step Guide

Step 1

Bring salted water to a boil in a large pot; boil the beetroot for 3 minutes until tender. Drain and transfer to a bowl of ice water; let cool for 2 minutes.

Step 2

Drain again and place the beetroot in a sterilized 1-liter jar, adding the mustard seeds, allspice, black pepper, cloves, cinnamon, ginger, and orange zest.

Step 3

In a medium bowl, mix the whey, honey, and water; pour into the jar with the beetroot (the marinade should completely cover it). Pour any remaining marinade or water into a resealable plastic bag and place it on top of the contents of the jar.

Step 4

Wrap the jar in a large kitchen towel and let it steep at room temperature (20—23˚C) for 1 week. When the beetroot is ready, season with salt, cover the jar with a lid, and store in the refrigerator for no more than 1 week.
