Description
As an additional flavor element for this dish, you can use rum or sweet fortified wine. It makes the taste of farofa — already complex — even richer.
Ingredients
- Bacon 3 pieces
- Semolina 5 oz
- Parsley 0 oz
- Olive Oil 0 fl oz
- Oranges 3 pieces
- Raisins 5 oz
Step-by-Step Guide
Step 1
Chop the bacon into pieces and sauté over medium heat for three minutes, until the fat is rendered.
Step 2
Add semolina and sauté, stirring for a couple of minutes, then add the chopped parsley, pour in the oil, and toss in the raisins. Cook everything together for another two to three minutes.
Step 3
Cut the orange into segments, removing the peel and pith. Alternatively, you can simply slice it into wedges. Combine the oranges with raisins and bacon, or serve the orange slices separately.
