Ingredients
- Eggplants 5 oz
- Tomatoes 5 oz
- Orange Bell Peppers 0 oz
- Green Tagliatelle Pasta 10 oz
- Herbes de Provence a pinch
- Passata Tomato Sauce 0 oz
- Ocean salt 0 oz
Step-by-Step Guide
Step 1
In a large skillet, sauté the eggplant, bell pepper, and tomatoes for 10 minutes.
Step 2
Add the tomato paste, spices, salt (10 g), and a little water to the almost cooked vegetables. Simmer the mixture for another 7 minutes.
Step 3
In salted boiling water, cook the pasta (farfalle or any other pasta) until 'Al dente' (meaning slightly undercooked). Then drain the pasta in a colander and rinse with drinking water.
Step 4
Combine the cooked pasta with the vegetables in the skillet and simmer on low heat for about 3 more minutes.
