Farfalle with Shrimp and Arugula

Ingredients

  • Tiger shrimp in brine 14 pieces
  • Green Tagliatelle Pasta 5 oz
  • Arugula 0 oz
  • Garlic 4 cloves
  • Mild Chili Spice 1 piece
  • Parmesan Cheese 1 piece
  • Dry White Wine 0 fl oz
  • Olive Oil 0 fl oz

Step-by-Step Guide

Step 1

Cook the pasta in salted boiling water with 1 tablespoon of olive oil for 11 minutes, then drain and reserve the water.

Step 2

Slice 2 thin pieces of chili pepper, crush, peel, and roughly chop the garlic.

Step 3

Sauté the garlic in olive oil over high heat for 10 seconds.

Step 4

Add the shrimp to the pan and sauté for 1 minute on each side, pour in 50 ml of dry white wine, add the chili slices, and let the alcohol evaporate for 30 seconds.

Step 5

Add half of the arugula, tearing it by hand, lightly season with salt and pepper, and mix.

Step 6

Add the pasta to the shrimp, pour in 100 ml of the reserved pasta water, 2 tablespoons of olive oil, mix, and heat the pasta for another 1.5 minutes.

Step 7

Add the remaining arugula, mix, plate, sprinkle with grated Parmesan, and serve.
