- Ocean salt to taste
- Nutmeg to taste
- Semolina 10 oz
- Grated Pecorino Pepato Cheese 5 oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pour the milk into a large, wide pot (you need space to whip the mixture well later), then add the butter, season with salt, and incorporate the nutmeg.
Step 2
When the milk reaches a boiling point, gradually sprinkle in the semolina while continuously whisking the mixture.
Step 3
Continue to whisk until the mixture thickens and large bubbles start to form on the surface. This will take about 3 to 5 minutes.
Step 4
Remove the pot from the heat, add grated cheese, whisk, and check for salt and pepper. Transfer the mixture to a bowl, sprinkle with nutmeg, and serve.
