Step-by-Step Guide
Step 1
Cut the peppers and zucchini into large strips. Slice the onion into half rings. Transfer everything to a bowl and mix with olive oil, cumin, and pepper paste.
Step 2
Heat a skillet over medium heat and add the vegetables. Sauté for 10 minutes, stirring, until soft and lightly browned.
Step 3
Add the arugula, season with salt and pepper. Squeeze the juice from a quarter of the lime and immediately remove from heat.
Step 4
Serve on warmed tortillas with sour cream, guacamole, and sprinkle with grated cheddar.
