English vanilla cream with cinnamon
Ingredients
- Milk 5 fl oz
- Whipped Cream 5 fl oz
- Egg white 3 pieces
- Vanilla Pod ½ piece
- Sugar 5 oz
- Cinnamon to taste
Step-by-Step Guide
Step 1
In a small saucepan, combine the milk and cream. Split the vanilla pod and scrape out the seeds. Place only the pod in the saucepan. Bring to a boil and remove from heat.
Step 2
In a bowl, whisk the yolks with the sugar until light and fluffy. Then, gently incorporate the hot milk mixture and pour the mixture back into the saucepan. Place over low heat and stir until the sauce thickens, but do not let it boil, for about 5 minutes. Strain the sauce into a bowl, cover, and cool.
Step 3
Add cinnamon to the cooled mixture to taste (for aroma). Then stir well.
