Step 1

The technique for preparing English cream is not simple, and the most important task is to achieve the correct temperature, as it's easy to turn the sauce into an omelet. You may not succeed the first time, but with experience, you'll master it. So, beat the egg yolks with sugar until pale.

Step 2

Bring the milk with vanilla to a boil. Pour 100 ml of the hot milk into the egg yolks to slightly equalize the temperatures of both mixtures. Then, slowly pour the hot vanilla milk into the egg and milk mixture while continuing to whisk.

Step 3

Reduce the sauce over low heat until it reaches a temperature of 180°F, stirring constantly with a wooden spatula or whisk. When the sauce begins to coat the back of the spatula, it is ready. For beginners, it's easier to make the English cream using a double boiler; this method takes about 15 minutes, but it prevents any burning.
