
Eggs with Sweet Potato

Ingredients
- Chicken Egg 4 pieces
- Onion ½ head
- Sweet Potato 1 piece
- Tomatoes 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Herbes de Provence to taste
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Peel the sweet potato and cut it into small cubes. Finely chop the onion and tomatoes.
Step 2
In vegetable oil, sauté the onion, then add the sweet potato and sauté for another 6–10 minutes.
Step 3
Add the tomatoes, season with salt, pepper, and herbs de Provence.
Step 4
Simmer for another 6–7 minutes.
Step 5
Then crack the eggs into the same pan and fry until cooked.
Step 6
Serve immediately.
