- Sour Cream 3 tablespoons
- Cherry Tomatoes 3 pieces
- Eggplants 10 oz
- Bread 2 slices
- Herbs to taste
- Cheese to taste
Step-by-Step Guide
Step 1
Cut the bread into thick slices, toast in butter until golden brown, and set aside on a separate plate.
Step 2
Cut the eggplant into large pieces, halve the cherry tomatoes, season with salt, and sauté in olive oil until cooked through.
Step 3
Whisk the eggs with sour cream, season with salt, and pour over the eggplants and tomatoes. Top with the toasted bread. Cook on low heat under a lid until set. Serve with herbs and cheese!
