- Walnuts 5 oz
- Garlic 2 cloves
- Parsley 0 oz
- Salt to taste

Step 1
Wash the eggplants thoroughly, cut them lengthwise, place them in boiling water for 5 minutes, then squeeze out the water and salt them. Peel the walnuts and crush them with salt and garlic or pass them through a meat grinder. Add finely chopped parsley, a little boiled water to the crushed nuts, and mix everything together.
Step 2
Stuff the eggplants with the prepared nut mixture and place them in the oven to bake for 5–7 minutes.
